Teff-Almond Cake

Teff-Almond Cake

Ingredients

  • 100g ivory teff flour
  • 140 g caster sugar
  • 200g ground almond
  • 160 ml olive oil
  • 3 medium eggs or 4 if the batter feels very dry
  • 1 tbsp gluten free baking powder
  • zest of one orange

Instructions

Heat oven at 180 degrees (fan assissted oven).

Mix oil and sugar till smooth.

Add eggs and beat with a mixer gently.

Add ground almond, ivory teff and baking powder together. Mix gently. Add orange zest. Set aside.

Add batter into a baking tray. Bake for 30 to 35 minutes.

Enjoy with a cup of coffee or tea.

    Thank you for sharing these teff recipes! They all look so delightfuly tempting! Now that teff is to be found in the local stores in Norway, I can’t wait to bake with teff as an ingredient! Looking forward for more recipes to come!
